My husband and I have pretty much devoted our Tuesday night dinners to some sort of Taco themed dinner. Tonight, we have pulled out one of our freezer meals and will make our Taco Casserole! Yum Yum! Cant wait to dig into this! Check out our recipe down below
1lb turkey or beef ground meat
***if you use turkey, I put in a teaspoon of cumin
1 can black beans or ranch style beans. (My husband loves the ranch style beans in the black can and tastes like charro beans once seasoning is added)
1 Can rotel
Two bags of boil in a bag rice (cooked)
1 package of taco seasoning
1 cup of corn
1 cup of shredded cheddar cheese
1 cup of diced jalepenos (optional)
1 onion chopped or to your liking (optional)
salt and pepper to taste
Preheat the oven to 350 degrees
Grease a 9×13 pan and set aside
Combine the meat and onions and brown (drain) then once finished, add in the taco seasoning and bring to a simmer.
Add in the corn, rotel, beans, and jalepenos and stir.
***I keep a few jalepenos to the side and then add them to the top for a nice color
Once finished, spoon in the rice on the bottom layer. Once rice is on bottom, spoon in the meat mixture and top it off with your cheese and jalepenos.
Cover with foil and bake for 20-25 minutes making sure it cooks all the way through.
Take out and serve immediately. I top with sour cream and enjoy! I even set out salsa and chip as an appetizer and my husband enjoys that. When I am feeling a bit risky, I even make my own queso. 🙂
*****If you want to freeze the meal, cover it and put in the freezer. When wanting to serve it, take it out the night before and let it thaw in the fridge. Instead of baking it for 20-25 minutes, I bake it at 45-50 minutes. 🙂 I keep it covered for a little bit, then take the foil off and let it get nice and golden brown at the top!
